Birthplace of Kanten

Production of kanten (white agar) in Fushimi is believed to date from the early Edo period due the existence of an explanation in the Wakan Sansai Zue encyclopedia compiled in the early 18th century, which notes, in its section on tokoroten jelly. "This is produced in Fushimi, Yamashiro Province." The Fushimi Kagami, an illustrated guidebook to Fushimi from the late 18th century, notes that Originally, this product was first made in Fushimi," showing that Fushimi is the birthplace of kanten. The Fushimi Kagami also says that kanten trade guild was based in Okago-cho. Until the Taisho period, neri yokan confectionary, made using kanten, was one of Fushimi's local specialties.

There are various legends about kanten's origins, including that its production method was accidentaily discovered when preparing a feast for Lord Shimazu of Satsuma, it was given its name by Ingen (founder of Obaku Zen Buddhism), and that the first shop to make kanten was Mino-ya. Notably, the existence of a shop called Mino-ya in Okago-cho in the modern period can be confirmed by old land registers. These historical facts about kanten in Fushimi, and Okago-cho in particular, and the numerous legends placing Fushimi as the origin. make it clear ihat kanten was produced here during the Edo period, and almost certain that Fushimi was its birthplace

Since the modern period, production has moved to the north of Mishima County. Osaka, then to the village of Kashida in Minami-Kuwada County, Kyoto (now part of Takatsuki City, Osaka), and finally to northem Nagano Prefecture as makers sought places with colder and colder winters. Today, kanten is no longer made in Fushimi. Thanks to the efforts of supporters, a stone marker reading "Birthplace of Kanten" was set up in Kyoto Municipal Fushimi Junior High School, adjacent to Okago-cho, on December 27. 2020
